Going to a Filipino party means a bounty of foodstuffs, the star of which is the lechon.* My favorite part is the “panit” (skin) when it is still crunchy. Most people love the “unod” (meat part) from the belly. My brother takes great joy with the tongue part. (Yes, we all agree he is crazy.)
It was no surprise then that when we were invited to a Filipino party last December 9 in Lakewood there were two tasty lechon Cebu. “It is a truth generally accepted”** that Cebu has the best lechon. Those at the party were not flown in from Cebu. They were just prepared by a Cebuano.
This does not mean however that being a Cebuano, I could prepare a tasty lechon. My talent in the culinary arts is limited to the eating and praising the work part.
